Amish-Inspired Buttered Noodles – Easy Like Sunday Morning

Dinner doesn’t always have to be complicated. When you want something quick and delicious, these buttered noodles are where it’s at!

On the weekends a lot of times, I will make a really big lunch just because I have the time to spend in the kitchen. I love feeding my family all kinds of yummy foods, and I don’t like to do it in the evening because that’s when our time to relax together is. So, by the time dinner comes around, we aren’t really hungry for a full four-course meal. Instead, we will just have something small. One of my all-time favorite things to make is buttered noodles. Even my picky three-year-old loves them!

I have used all different combinations of seasonings and flavors over the years, but this recipe seems to be the one that goes over the best. It’s still really easy to make, and you probably have everything  you need already in your house.

Amish-Inspired Buttered Noodles – Easy Like Sunday Morning

Prep time 5 mins; Cook time 40 mins

Serves 6

INGREDIENTS

  • 6 tablespoons Kerrygold butter, divided
  • 28 ounces Swanson chicken broth
  • 1 chicken bouillon cube
  • 12 ounces extra wide egg noodles
  • 1 tsp. parsley flakes
  • salt and pepper, to taste

PREPARATION

  1. In a large pan, brown two tablespoons of butter over medium heat.
  2. Pour the chicken stock and bouillon cube into the pan and bring to a boil.
  3. Add the egg noodles to the chicken stock and return to a boil. Cover the pot and remove from the heat. Let the noodles set for 30 minutes, stirring every 10 minutes or so. If you notice a lot of liquid left in the pot, test a noodle to be certain they are done to your liking. If they're not quite done, return to the heat until the liquid has evaporated and the noodles are done. If the noodles are done to your liking, just drain the liquid away.
  4. Top with the remaining 4 tablespoons of butter, parsley, and salt and pepper to taste.
  5. Serve immediately or leave in the pan, covered, until ready to serve.

Use store-bought egg noodles or make your own homemade version!
