You’ll never have to struggle with an idea of what to take to your next potluck. This hot and cheesy potato salad will be your go-to recipe!

It was Easter weekend, and I knew we had a few different dinners that we had to go to. Part of going to these dinners is taking a dish to pass. In the past I have been famous for getting a pre-made relish tray or box of cookies from the bakery and calling it good. Now that I was growing up and had a little more skill in the kitchen, I wanted to try doing something else for a change. I didn’t have a huge recipe book, so I went online and started poking around.

That’s the beauty of the internet. You can find just about anything on there. That’s how I stumbled upon this little beauty. It looked so good I wanted to eat it right through the screen. After going over the ingredients and instructions, I decided it was definitely something that I could handle making.

I gathered up all the ingredients at the grocery store and made it for our first dinner. I could tell that it was a good choice, because there wasn’t a single potato left in the pan. You can amaze your party-goers with this great recipe by jumping over to the next page!

INGREDIENTS

  • 8 large potatoes, skins left on and cubed
  • 3⁄4 lb Velveeta cheese
  • 1⁄2 cup onion, diced
  • 1 cup Duke's mayonnaise
  • 1⁄2 lb diced bacon, partly cooked
  • 1⁄2 cup stuffed olives, sliced
  • salt and pepper

PREPARATION

  1. Cook potatoes with their skins on just until fork tender but still firm.
  2. Combine potatoes, cheese, onions, mayonnaise, salt, and pepper.
  3. Put in a 9 x 13-inch baking dish top with bacon and olives and.
  4. Bake for 1 hour at 325°F.

QUICK TIP

Feel free to use the whole pound of bacon. You can’t have too much in this scrumptious potato recipe.
