Easter Dinner Basically Delicious Deviled Eggs

When you have deviled eggs like this at your next dinner, everyone is going to be hopping over to the table for at least one!

Back when I was younger, we would always go to my Grandma and Grandpa’s house for every single holiday dinner. Grandma was a stay-at-home wife and an incredible cook. She was still fairly energetic back then, so she would take care of all the cooking and cleaning and whatever else needed to be done for our family. There were about 25 or so of us that would show up for each of these dinners, so it wasn’t all that bad. Fast forward 20 years, and things are a lot different.

That 25 people is more like 50 now with people getting married and having children. Grandma doesn’t have as much energy as what she did at one time either. So, now we all bring a dish to pass instead of putting on the work on her. My favorite thing to volunteer for is the deviled eggs!

Easter Dinner Basically Delicious Deviled Eggs

INGREDIENTS

  • 6 large eggs
  • 2 tablespoons Duke's mayonnaise
  • 1 1/2 tablespoons sweet pickle relish
  • 1 teaspoon prepared mustard
  • 1/8 teaspoon Morton salt
  • Dash of pepper
  • Garnish: paprika

PREPARATION

  1. Place eggs in a single layer in a saucepan; add water to depth of 3 inches. Bring to a boil; cover, remove from heat, and let stand 15 minutes.
  2. Drain immediately and fill the saucepan with cold water and ice. Tap each egg firmly on the counter until cracks form all over the shell. Peel under cold running water.
  3. Slice eggs in half lengthwise, and carefully remove yolks. Mash yolks with mayonnaise. Add relish, mustard, salt, and pepper; stir well. Spoon yolk mixture into egg whites. Garnish, if desired.
