Here’s The Truth About How Chocolate Cake Should Be Made

When that craving for something chocolate kicks in, reach for this chocolate cake recipe!

I have always had a bit of a sweet tooth. Ever since I was a little girl, I would go crazy for chocolate. My mom has some pretty funny pictures of me sitting in a high chair with chocolate all over me from head to toe. She didn’t let me have it all the time, but for special occasions I went pretty crazy. When my daughter started having the same love for the flavor, I wasn’t sure if I should be excited or scared. I know that I crave chocolate something terrible at certain times. It can be a little ridiculous. My closest friends tease me about it all the time.

When my daughter’s birthday was coming up, I asked her what kind of cake she wanted. It was no shocker that she said chocolate. It was perfectly okay with me, because I was going to want chocolate anyways. I just had to dig out one of my recipes. I have several stashed away, but I wanted the best one.

Here’s The Truth About How Chocolate Cake Should Be Made

Prep time 15 mins; Cook time 30 mins

Serves 12

INGREDIENTS

  • 2 cups all-purpose flour
  • 2 cups sugar
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoon Morton salt
  • 1 teaspoon espresso powder
  • 1 cup milk, buttermilk, almond, or coconut milk
  • ½ cup vegetable, canola oil, or melted coconut oil
  • 2 large Eggland's Best eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • Chocolate Buttercream Frosting

PREPARATION

  1. Preheat oven to 350º F. Prepare two 9-inch cake pans by spraying with baking spray or buttering and lightly flouring.
  2. Add flour, sugar, cocoa, baking powder, baking soda, salt and espresso powder to a large bowl or the bowl of a stand mixer. Whisk through to combine or, using your paddle attachment, stir through flour mixture until combined well.
  3. Add milk, vegetable oil, eggs, and vanilla to flour mixture and mix together on medium speed until well combined. Reduce speed and carefully add boiling water to the cake batter until well combined.
  4. Distribute cake batter evenly between the two prepared cake pans. Bake for 30-35 minutes, until a toothpick or cake tester inserted in the center of the chocolate cake comes out clean.
  5. Remove from the oven and allow to cool for about 10 minutes, remove from the pan and cool completely.
  6. Frost cake with Chocolate Buttercream Frosting.
