Hold On To Your Meatballs! These Are Delicious!

You’ve never seen or tasted a great meatball until you have tried this scrumptious recipe for yourself!

We were going to baby shower for my oldest niece, and my daughter and I were so excited. It was going to be the first baby shower that I got to take her to. I was ready to show her how much fun these events can be when you are with the people you love and celebrating the birth of a new family member. We got all dressed up and carefully wrapped her gifts. My daughter couldn’t have been more proud walking into the banquet center with those presents for her new baby cousin.

I wasn’t even really thinking about the lunch until my sister mentioned that we could go up and eat pretty much whenever we wanted. It was going to be an open house kind of a shower so people would be coming and going at all different times.

That sounded like a great idea to me. When I saw that my sister had made her famously delicious meatball recipe, I made a beeline for them. I knew that when word got out they were on the buffet line, they weren’t going to last long. Find the recipe on the next page for these tasty treats!

INGREDIENTS

  • 1 pound ground beef
  • 1/2 pound ground veal
  • 1/2 pound ground pork
  • 2 cloves garlic, minced
  • 2 Eggland's Best eggs
  • 1 cup freshly grated Romano cheese
  • 1 1/2 tablespoons chopped Italian flat leaf parsley
  • salt and ground black pepper to taste
  • 2 cups stale Italian bread, crumbled
  • 1 1/2 cups lukewarm water
  • 1 cup olive oil

PREPARATION

  1. Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
  2. Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. Shape into meatballs.
  3. Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel.

QUICK TIP

You can use any combination of ground meats that you wish as long as it adds up to two pounds total to proportion properly with the rest of the ingredients.
