How To Cook The Perfect Roast Potatoes

These garlic roasted potatoes make the perfect side dish to any main entree, and they are always a hit at potluck dinners too!

I grew up in a pretty traditional, old-fashioned type of household. My mom stayed home and took care of the kids while my father went out and supported the family financially. It worked for us, but it’s not something that I have ever wanted for my own adult life. I have always wanted to work and take care of my family both. It’s not always easy, but we make it work, and we’re all happy. When it comes time for dinner, my husband and I take turns.

One thing I can bet on when my husband is cooking is there are going to be potatoes. He thinks we should have potatoes with every single meal. That’s fine with me because that’s exactly how my mom used to cook for us.

The potatoes that he makes that I love the most are his garlic roast ones. I could sit down and just eat a plate of these and skip the main entree completely. I have learned how to make them over the years too, and they are so easy! Find out what I mean on the next page.

How To Cook The Perfect Roast Potatoes

Prep time 10 mins; Cook time 1 hour

Serves 6

INGREDIENTS

  • 2 pounds white potatoes, cut into 1-inch cubes
  • 2 tablespoons good quality olive oil or canola oil
  • 1 teaspoon sea salt
  • 3/4 teaspoon freshly ground black pepper
  • 2 tablespoons minced garlic (or 8 cloves garlic, minced)
  • 2 tablespoons fresh chopped parsley

PREPARATION

  1. Preheat the oven to 200°C | 400°F. Lightly spray a baking sheet or tray with cooking oil spray.
  2. Arrange the potatoes on the sheet in one layer, and add the oil, salt, pepper, and garlic. Toss until the potatoes are well coated and seasoned.
  3. Roast in the oven for 45 minutes to 1 hour, while flipping occasionally, until crisp and golden.
  4. Remove the potatoes from the oven and season with a little extra salt and pepper to taste. Sprinkle over with parsley and serve.

QUICK TIP

You can use less or more garlic in these potatoes depending on your personal taste preferences.
