How To Cook The Perfect Roast Potatoes

Whenever we get assigned to bring a potato for a family dinner, my husband and I go to work whipping up a huge batch of these. When they are done, we just toss them in a roasting pan lined with foil or a slow cooker set to low, depending on how long it’s going to be before we eat. We have done up as much as 10 pounds of potatoes at once before, and there are never any leftovers. People go crazy over them. They are delicious just as they are, or you can top them with cheese, sour cream, and bacon bits for a whole new take. My kids love to put ketchup on theirs. Whatever you try, let us know how it is! How To Cook The Perfect Roast Potatoes

Prep time 10 mins; Cook time 1 hour

Serves 6


  • 2 pounds white potatoes, cut into 1-inch cubes
  • 2 tablespoons good quality olive oil or canola oil
  • 1 teaspoon sea salt
  • 3/4 teaspoon freshly ground black pepper
  • 2 tablespoons minced garlic (or 8 cloves garlic, minced)
  • 2 tablespoons fresh chopped parsley


  1. Preheat the oven to 200°C | 400°F. Lightly spray a baking sheet or tray with cooking oil spray.
  2. Arrange the potatoes on the sheet in one layer, and add the oil, salt, pepper, and garlic. Toss until the potatoes are well coated and seasoned.
  3. Roast in the oven for 45 minutes to 1 hour, while flipping occasionally, until crisp and golden.
  4. Remove the potatoes from the oven and season with a little extra salt and pepper to taste. Sprinkle over with parsley and serve.
