How To Make Tomato Parmesan Pot Roast In Your Slow Cooker

There’s going to be a day this week that you don’t feel like cooking. Let the slow cooker take care of the work with this tomato parmesan pot roast!

My husband’s favorite food has always been pot roast and mashed potatoes. His mother used to make one for his family when he was growing up about once a week. It’s a super hearty meal, and there are usually leftovers so they could eat it twice. No matter how hard I tried over the years, there was no way that I could ever come close to matching her recipe.

That’s when I decided that I would have to come up with something different. Instead of trying to duplicate hers, I wanted something that was a variation of the dish. I heard about this recipe from a lady that I worked with, and asked her to send me over a copy. It was different that was for sure, so I wanted to see if it was as good as it sounded.

I can tell you right now, that this was way better than what I expected it to be. Even my husband enjoyed it a whole lot more than what I thought with it being non-traditional.

How To Make Tomato Parmesan Pot Roast In Your Slow Cooker

Prep time 15 mins; Cook time 4 hours

Serves 6 to 8

INGREDIENTS

  • 2-pound chuck roast
  • 1½ teaspoons Morton salt
  • ½ teaspoon pepper
  • 1 cup grated Kraft Parmesan cheese
  • ½ cup finely chopped sun-dried tomatoes
  • 2 teaspoons fresh rosemary, finely chopped
  • 2 tablespoons minced garlic

PREPARATION

  1. Place roast in a 6-quart slow cooker. Season evenly with salt and pepper.
  2. In a bowl, combine Parmesan cheese, sun-dried tomatoes, rosemary and garlic.
  3. Sprinkle Parmesan mixture evenly on roast, pressing into the meat to create a crust.
  4. Cover and cook on high for 4 hours.
  5. Remove the pot from the slow cooker base, remove lid and allow roast to rest for 10 to 15 minutes before slicing.

QUICK TIP

You can spread the cooking time out on this if you cook it on a low temperature setting. It’s going to take about 8 hours that way.
