I’m Taking This Pesto Artichoke Dip With Me Everywhere I Go

We had a few late night meetings with some friends coming up for the holidays. They weren’t going to be full dinner parties.

There were tons of dinners that everyone had to go to for family, work, and just about any other reason that you could think about for having to have a dinner. We had all had a discussion and decided that we would skip the big dinner and meet up later with some appetizers and a few adult beverages. It was going to be a much more relaxed type of a setting and that’s exactly what we were going to need after all the craziness of the holiday season. I was super happy that they offered to have the event at their house, because it seemed like I had been cleaning my own home for weeks and it was still messy.

I did promise that I would bring some kind of appetizer though, and I had a recipe from Lemon Tree Dwelling that I had been waiting to try out for months. It was the ideal time to use it.

I knew that it would be easy, and it was covered in cheese so what’s not to love about it? I couldn’t wait to share it with everyone.

Prep time 5 mins; Cook time 20 mins

Serves 8

INGREDIENTS

  • 8 oz. Philadelphia cream cheese, softened
  • 1 cup shredded Sargento Italian cheese blend, divided
  • 1/2 cup roasted red peppers, finely chopped
  • 1/2 cup artichoke hearts
  • 1/3 cup prepared pesto

PREPARATION

  1. In a small mixing bowl, combine cream cheese, 2/3 c. shredded cheese, artichoke hearts, 1/3 c. roasted red peppers, and pesto. Use a hand mixer to mix thoroughly.
  2. Spoon into a small baking dish; top with remaining shredded cheese.
  3. Bake at 400 degrees 15-20 minutes or until cheese is fully melted.
  4. Remove from oven; top with remaining red peppers and drizzle with pesto.
