Mac & Cheese With Bacon And… More Cheese!

Take your boring macaroni and cheese to a whole new level by adding in one of our most beloved ingredients… bacon!

It was going to be a couple’s night for my sister and her husband along with my husband and myself. Usually, we go out to dinner and a movie or something, but the weather was awful and nobody wanted to really drive. I suggested that they just come to our house and hang out and I would make something for us to eat. I love spending time in the kitchen and trying out different recipes. With the cold weather and lack of children being around, I decided it was the perfect opportunity to make this grown-up version of a classic comfort food.

Bacon pretty much makes everything taste better, so there was no doubt in my mind that it was going to be tasty. I just wasn’t sure what everyone else was going to think. I didn’t make a main entree, because this was a great big casserole pan full of pasta.

There was certainly going to be plenty to go around, all I could hope was that it tasted as good as what it smelled like coming from the oven.

Mac & Cheese With Bacon And… More Cheese!

Serves 8 to 10

INGREDIENTS

  • 16 ounces one box elbow macaroni
  • 1⁄2 cup Kerrygold butter
  • 1⁄2 cup sifted Gold Medal flour
  • 4 cups milk
  • 2 -3 teaspoons hot sauce
  • 16 ounces shredded sharp cheddar cheese
  • 16 ounces crumbled bacon
  • Optional ingredients:
  • top with shredded parmesan cheese and breadcrumbs
  • top evenly with shredded sharp cheddar cheese

PREPARATION

  1. Cook macaroni according to box directions and set aside.
  2. In a medium saucepan melt butter over low heat. Add flour and stir constantly until smooth.
  3. Turn heat to medium and add milk stirring constantly until thick. (About 10 minutes).
  4. Add hot sauce. Stir until mixed in evenly.
  5. Add pasta, bacon and cheese. Mix until cheese melts, bacon is mixed in, and pasta is evenly coated.
  6. Pour macaroni and cheese into a 9x13 baking dish and top according to taste.
  7. Bake in preheated oven at 350 degrees for about 25-30 minutes.

QUICK TIP

You can use whatever shape pasta you have on hand. You may have to adjust your liquids if it’s a thick style noodle.
