I am a busy mom; there’s no denying that. From sun up to sun down, I am cooking meals, helping with homework, folding laundry…you get the picture. And, you know what? I love every minute of it! The recipe only calls for 1/3 cup of dry breadcrumbs which basically makes it carbless. You can sub them for almond flour if you’d like 🙂

INGREDIENTS

  • 3/4 pound ground beef
  • 1 egg, beaten
  • 1 (1 oz.) Hidden valley Ranch Original Dressing packet
  • 1/3 cup dry 4C Breadcrumbs

PREPARATION

  1. Preheat oven to 350ºF.
  2. Mix all ingredients together in a bowl, but avoid excessive handling for a moist meatloaf. Form into a loaf and place in a baking dish or loaf pan.
  3. Bake for 40–45 minutes or until the internal temperature reaches 165ºF.
  4. Remove from oven and let the meatloaf stand covered for 10–15 minutes before slicing.

QUICK TIP

If you like the taste of onions feel free to add a 1/2 cup to the mix. I usually chop them quite finely so my kids don’t notice them.

Add a few squirts of ketchup to the top of the meatloaf during the last 15 minutes of cooking. Spread on with a spoon or knife to cover the top of the loaf, evenly.
