Roasted Red Potatoes Like This Are Good Enough For Any Entree

I already knew that I was going to be making a great big ham for Sunday dinner, but that was about as far as I had made it in the plans.

We have Sunday dinner at one another’s houses all year long long. We rotate between my parent’s house, and my oldest sister’s, along with mine. We are the only people that have the amount of space that we need to house everyone for a meal. I think that there are about thirty people that show up pretty regularly for some bonding time and a good meal. Whoever shows up will usually bring some sort of dish to pass, but the person hosting the party is in charge of the main entree and will handle the potato. We pretty much always have mashed potatoes, but I wanted something different.

My husband has always been a huge fan of roasted red potatoes, so I thought I would find a recipe for those. I already had the red potatoes in the house to use, so I just needed this recipe from Kitchen Swagger to instruct me on how to make them.

It was one of the easier recipes that I have used for potatoes, and I had everything I needed on hand!

Roasted Red Potatoes Like This Are Good Enough For Any Entree

Prep time 10 mins; Cook time 35 mins

Serves 4 to 6

INGREDIENTS

  • 1 POUND SMALL RED POTATOES, HALVED OR QUARTERED
  • 2-3 TABLESPOONS OLIVE OIL
  • 1-2 TABLESPOON FRESH ROSEMARY, REMOVED FROM SPRIG AND CHOPPED
  • SEA SALT AND GROUND PEPPER TO TASTE
  • 2 GARLIC CLOVES, MINCED

PREPARATION

  1. Preheat oven to 400° F.
  2. Rinse the potatoes and cut into halves or quarters depending on the size.
  3. Combine the cut potatoes, olive oil, garlic, rosemary, salt, and pepper in a cast iron skillet. Stir to fully coat in olive oil and spices.
  4. Distribute potatoes evenly in the skillet and bake for 30-35 minutes or until golden and tender. Be sure to toss/flip potatoes after 15 minutes.
