You Want A Surprise Like This Beef And Bean Burrito Dish

My husband doesn’t do a whole lot of cooking around our house, but when he does, I am extremely grateful to him.

He’s actually a really good cook when he takes the time to get in there and do it. I think he has fun too, it’s just that with his busy work schedule, he doesn’t always have the time or the energy to come home and keep working. The weekends are definitely his time to shine though. He even goes as far as looking up new recipes or calling his mom to ask about some of his favorite ones from when he was a kid. It’s a really nice quality that I admire in him that even at this age he still needs his mama. I hope my kids are like that.

There are a lot of Mexican-inspired dishes that his mom makes, being from Mexico herself, and those are the ones that I really look forward to. I can make a taco like nobody’s business, but that’s nothing compared to some of the stuff that he can come up with. The last time he cooked, he made her beef and been burritos and I felt like I had stepped into my favorite Mexican restaurant for a meal.

He had even taken the time to get out the nice place settings and set the table and play a little music. Like I said, it doesn’t happen often, but when it does… it’s fantastic!


You Want A Surprise Like This Beef And Bean Burrito Dish


  • 1 medium onion, diced
  • 2 pounds ground beef
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon ground oregano
  • 1/4 teaspoon salt
  • Three 7-ounce cans Mexican tomato sauce or enchilada sauce
  • One 28-ounce can Old El Paso refried beans
  • 3/4 cup grated Cheddar, plus extra for sprinkling
  • 12 burrito-size Azteca flour tortillas
  • 1/2 cup fresh cilantro leaves


  1. Preheat the oven to 170 to 180 degrees F.
  2. In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until the beef is cooked through. Add the cumin, chili powder, oregano and salt and stir to combine. Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low heat for 5 minutes. Add a little water if the mixture gets too dry.
  3. Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and stir it in till its melted. Remove from the heat.
  4. Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on each tortilla. Add a small amount of the meat. Fold over the ends of the tortilla, and then roll them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with foil and keep warm in the oven.
  5. When ready to serve, drizzle the remaining can of tomato sauce over all of the burritos and sprinkle with more grated Cheddar. Return to the oven for a couple of minutes just to melt the cheese.
  6. Sprinkle the tops with the cilantro leaves and serve immediately.
